Also assuming the Buddha frequently taught meditation it might have been useful for him and his students if he continued to practise it.

To my mind the image of the Buddha is a symbol of peacefulness, serenity, mindfulness, compassion etc. It can be beneficial to have one around as a reminder that those things, that the capacity for enlightenment is within you. I use Thanissaro's method. Thus far, in my opinion it seems closer to the anapanasati sutta than any other method I've tried. In the sutta the Buddha very quickly goes on to being aware of the whole body whilst breathing, and then calming it. Not many other teachers seem to focus on this, but Thanis...

There seems to mostly be poor quality resin statues on Amazon, and no local shops seem to have any good quality ones either.

Does anyone have an idea where in the UK I might be able to order a good quality Buddha statue?

It is usually translated as impermanence. Sometimes as transitoriness, inconstancy, among other things.

Essentially it means that everything that arises is subject to change, to eventually cease.

If you meditate as taught by the Buddha, and put in the appropriate effort you will get insights and wisdom from doing so. Do it right with commitment and effort and it's always useful.
