Amaravati or Chithurst are both a good bet, both established monasteries so not too much outside work and activities. They have their silent winter retreat from Jan-March, so I am not sure whether you can visit or stay during this period. Best email the guest monks at various places. Good luck With ...

All the Ajahn Chah monasteries will abide strictly to the Vinaya.

Dhammayut monasteries also generally follow very strict vinaya too. Not sure about the other ones.

Best thing to do is to travel around and what the places are like yourself. Everyone has an opinion and I would not recommend just going to a monastery with the view to ordain there without looking at other places. Sure, reading the suttas is a very wholesome way of spending one's time but going on retreat is putting the theory to practice. I am hoping to list as many monasteries and donation only meditation centers(granted there aren't many in the west other than Goenka and co) so a traveler can monastery/med...
